Vessel can be added as a favourite by either pressing on the vessel and highlighting it:

Choosing the Gear Icon from the bottom left corner in the platform:
In the overview of the vessels deciding which ones you want to be operating currently by sliding the banner to the right:
Once all that is done, on the right top corner choose the filter option and mark 'My Vessels Only' in order to have a full overview of the vessels you are currently operating on the map:
